OUR WINES
Nature as an inheritance,
wine to share
At Domaine BEDOUET Vigneron, each vintage reflects a strong commitment: respect for the land, time, and all living things. Convinced that authentic wine begins with healthy vines and living soil, our organic wines are made from vines cultivated with a constant focus on preserving the natural balance of our terroir.
Wine is made as close as possible to the grape; the goal of our winemaking is to create a nectar that expresses its terroir with subtlety and elegance.
The pressing is gentle; the yeasts that initiate alcoholic fermentation are indigenous (from the grapes and our environment), activated by a homemade starter culture (fermentation starter) prepared a week before the harvest. The freshly pressed juice flows by gravity into an underground tank.
All our wines (except the primeur) are aged on fine lees for 8 to 24 months, in different containers such as: stainless steel, concrete or fiberglass tanks, stoneware jars or oak barrels, until bottling is carried out at the estate by us.
This demanding work, carried out with rigor and passion, allows us to offer a range of lively, expressive wines.
Our grape varieties
We are proud to showcase the emblematic grape variety of our vineyard: Melon de Bourgogne , which is our local and regional identity and reveals the finesse, tension and fruit of Muscadet Sèvre et Maine through single-vineyard cuvées, each telling the story of a vintage, of a know-how passed down and refined over time.
Another grape variety characteristic of the Nantes vineyards is Folle Blanche, which, thanks to its freshness and vibrancy, once contributed to the production of exceptional eaux-de-vie. Today, it offers us a wonderful opportunity to create "natural" wines.
The Chardonnay grape for white wines, and Pinot Noir and Gamay for red wines, are well-established and reliable choices.
In the climatic context, in order to adapt and invest for the future, we have chosen to plant grape varieties that are adapted and naturally resistant to diseases: Souvignier gris , from a cross between Seyval, Guewurztramine and Riesling, Muscaris from a cross between Solaris and Muscat à petits grains and Egiodola , from a cross between Abouriou and Tinta de Madeira.
