Terroir:
This cuvée comes from a single 4.5-hectare plot called ‘Le Moulin Carré’, with deep soil composed of silt, gneiss and mica schist: a beautiful representation of the richness and geological diversity of the terroirs in the commune of Le Pallet!
Historique :
This unique cuvée is truly our creation, reflecting Descartes and his famous ‘Cogito ergo sum’ (I think, therefore I am), which invites us to embrace doubt in order to find our own path.
It is the path of enthusiasm and imagination that led us to produce this natural wine.
Vine cultivation and winemaking:
The work in the vineyard is rigorous and precise, because this is where the wine is made: organic cultivation, soil cultivation, no synthetic chemicals, and management based on the life of the soil and the vines.
The grapes are gently pressed (pneumatically), and the must flows naturally by gravity into one of our underground vats. The yeasts that accompany the start of alcoholic fermentation are indigenous (from the grapes and the environment), activated by a ‘homemade’ starter culture (levain). The watchword is to handle the harvest as little as possible and use as few additives as possible.
Malolactic fermentation naturally balances this wine, which is vinified without sulphites.
Breeding:
The wine is racked ‘after malo’ and aged on fine lees for around 9 months in oak barrels and stoneware jars, promoting micro-oxygenation.
Bottling will be carried out at the domaine by us.
Tasting:
The colour is bright and golden; the nose is concentrated, surprising with its notes of butter and iodine. The palate is complex, both powerful and refreshing, smooth and taut. Persistence, richness, balance and notes of ripe fruit are all present!
Food and wine pairings:
Serve between 11 and 13°C, with fish ceviche or John Dory in coconut milk, green curry, coriander and lemongrass...
