Terroir:
The vines are cultivated on gneiss and mica schist soil with superficial weathering.
South-west exposure and well-drained soil give the soil its precocity, with gentle temperature management through the release at night of heat stored during the day.
Historique :
This is the estate's historic plot, the first to be owned outright, acquired by Antonin's grandparents, thus ending their status as sharecroppers (tenants of vineyards who shared the harvest with the owner). ‘Primos’ means first, and the elders were right: it is usually the first plot we harvest!
Vine cultivation and winemaking:
The work in the vineyard is rigorous and precise, because this is where the wine is made: organic cultivation, soil cultivation, no synthetic chemicals, and management based on the life of the soil and the vines.
The grapes are gently pressed (pneumatically). The must flows naturally by gravity into one of our underground vats. The yeasts that accompany the start of alcoholic fermentation are indigenous (from the grapes and the environment), activated by a ‘homemade’ starter culture (levain). The watchwords are as little manipulation and as few inputs as possible during the harvest.
Breeding:
This enjoyable wine is matured on its fine lees until bottling, which is carried out at the domaine by us.
Tasting:
The nose opens with intense aromas of fresh citrus, stone fruit and white flowers. On the palate, the cuvée reveals vibrant freshness, beautiful complexity and an elegant length supported by saline notes characteristic of the schist terroir.
Food and wine pairings:
Serve between 10 and 12°C, as an aperitif, with seafood, fish in sauce, risotto, roasted white meats, and soft cheeses.
