Terroir:
years in the foothills of the Armorican massif: mica schist and gneiss characterise the terroir.
This unique architecture gives the soil qualities that are essential for the proper functioning of the vines: remarkable drainage of water and air, a balanced mineral content of silica, potassium and magnesium, and gentle temperature management through the release at night of the heat stored during the day.
Historique :
Produced from a plot called ‘Le Moulin Carré’ located near La Sèvre, this ‘Le Pallet’ Communal Cru is the finest expression of what Melon de Bourgogne has to offer: a great wine for fine dining.
Vine cultivation and winemaking:
The work in the vineyard is rigorous and precise, because this is where the wine is made: organic cultivation, soil cultivation, no synthetic chemicals, and management based on the life of the soil and the vines.
The grapes are harvested by hand. The berries are gently pressed (pneumatically). The must flows naturally by gravity into one of our underground vats. The yeasts that accompany the start of alcoholic fermentation are indigenous (from the grapes and the environment), activated by a ‘homemade’ starter culture. The watchword is to handle the harvest as little as possible and use as few inputs as possible.
Breeding:
This highly mature wine is aged for 24 months on its fine lees until bottling, which is carried out at the domaine by us.
Tasting:
The complex nose blends notes of ripe citrus, dried fruit, white flowers and a hint of iodine. On the palate, there is a perfect balance between tension, richness and finesse, carried by a silky texture and a lingering, salty finish.
Clearly suitable for ageing. A great wine that deserves to be served at the finest tables.

A gourmet wine par excellence, Le Pallet is a majestic accompaniment to fine fish, truffled poultry and mature cheeses. A Muscadet for ageing, designed for fine dining and special occasions.
