Terroir:
Here the vine takes root in a true geological mosaic shaped over millennia on the foothills of the Armorican massif: Mica schist and Gneiss mark its terroir.
Historique :
109 is the INSEE number of the city of Nantes, but also a subtle play on words "New blood" announcing the arrival of Antonin alongside his father in the estate.
Vine cultivation and winemaking:
Work in the vineyard is rigorous and precise, because this is where the wine is made: organic farming, soil cultivation, a ban on all synthetic chemicals, and practices based on the life of the soil and the vine.
Harvesting begins at full maturity. The grapes undergo maceration for 4 to 5 days, punctuated by gentle and regular pump-overs of the juice to homogenize the must. After collecting the free-run juice, the harvest is gently pressed. The free-run and press juices are blended, or not, depending on the quality of the vintage.
The yeasts that initiate alcoholic fermentation are indigenous (from the grapes and the environment), activated by a homemade starter culture. The guiding principle is minimal intervention and inputs during the harvest.
Malolactic fermentation naturally balances this wine, which is made without sulfites.
Breeding:
The wine is racked after malolactic fermentation and aged on fine lees for approximately 9 months in oak barrels and concrete tanks, thus promoting micro-oxygenation. Bottling will be carried out at the domaine by our team.
Tasting:
The wine is a brilliant, deep purple. The nose is elegantly expressive, beautifully showcasing our Pinot Noir. The palate is juicy, luscious, and luscious, revealing aromas of freshly crushed red berries. The finish is slightly peppery and tannic, which will bring structure, typicity, finesse, elegance, and persistence to the whole.

Served slightly chilled at 15°C, this is a wine for enjoyment, perfect for aperitifs, charcuterie, barbecues and good company! It also works well with grilled white meat, roast meat, or mild cheese.
