Terroir:
This cuvée comes from two different terroirs: silt, gneiss and mica schist soils in Le Pallet and amphibolite soils in La Haye-Fouassière.
Historique :
The Folle Blanche grape variety has been present in the Nantes vineyards for several centuries. Its acidity and low alcohol content made it ideal for producing fine brandies for international trade via the port of Nantes.
Phylloxera decimated the vineyards at the end of the nineteenth century, and the subsequent rise of Muscadet and decline of maritime trade gradually marginalised this production.
Today, climate change is transforming what was once a sometimes harsh acidity into a beautiful freshness, and its low alcohol content into a delicate palate.
Vine cultivation and winemaking:
The work in the vineyard is rigorous and precise, because this is where the wine is made: organic cultivation, soil cultivation, no synthetic chemicals, and management based on the life of the soil and the vines.
The grapes are gently pressed (pneumatically), and the must flows naturally by gravity into one of our underground vats. The yeasts that accompany the start of alcoholic fermentation are indigenous (from the grapes and the environment), activated by a ‘homemade’ starter culture (levain). The watchword is to handle the harvest as little as possible and use as few additives as possible.
Breeding:
The wine is racked ‘after malo’ and aged on fine lees for around 9 months in oak barrels. Bottling is carried out at the domaine by us.
Tasting:
The colour is clear with light golden highlights. The nose is fresh, lively and distinctive, beautifully showcasing our Folle Blanche grape variety. The palate is fruity and deliciously taut, with slightly salty citrus notes. The tartness is very well controlled and the ageing process brings roundness, chewiness, balance and delicacy to the whole.
Food and wine pairings:
Serve between 10 and 12°C. It is now unanimously enjoyed as an aperitif, with seafood, oysters and lightly grilled fish. It is a delightful wine that calls for friends!
