Terroir:

Here, the vines take root in a terroir characterised by siliceous, stony to very stony soils with a subsoil composed of metamorphic rock (derived from granite, transformed by pressure and high temperatures during the formation of the Armorican massif), predominantly orthogneiss.

Historique :

Melon de Bourgogne has been planted here for around thirty years. This Communal Cru, ‘La Haye-Fouassière’, is the finest expression of what Melon de Bourgogne has to offer: a great wine for fine dining.

Vine cultivation and winemaking:

The work in the vineyard is rigorous and precise, because this is where the wine is made: organic cultivation, soil cultivation, no synthetic chemicals, and management based on the life of the soil and the vines.

The grapes are harvested by hand. The berries are gently pressed (pneumatically). The must flows naturally by gravity into one of our underground vats. The yeasts that accompany the start of alcoholic fermentation are indigenous (from the grapes and the environment), activated by a ‘homemade’ starter culture (levain). The watchword is to handle the harvest as little as possible and use as few inputs as possible.

Breeding:

This highly mature wine is aged for 24 months on its fine lees until bottling, which is carried out at the domaine by us.

Tasting:

The colour is both bright and clear, and the subtle, delicate nose arouses curiosity. On the palate, time stands still. The balance between fruit and minerality is sublime. Thanks to the slow ripening process afforded by the orthogneiss soil, the harvested fruit is at its peak. The resulting wine is pure and concentrated, with a deep aromatic persistence. Its ageing potential is evident. A great wine that deserves to be served at the finest tables.

Food and wine pairings:

A gourmet wine par excellence, La Haye-Fouassière is a majestic accompaniment to fine fish, lobster and crayfish, truffled poultry and mature cheeses. A Muscadet for ageing, designed for fine dining and special occasions.
